Yes you can deploy VCSA in 5.0 hosts and you will be able to manage them and do vmotions.
No issue at all with vmotion!!!
The only thing is that Ess+ kit is a limited option for up to three hosts. You mentioned 4 hosts and that is not a supported scenario for this licenses.
